Grammie's Lemon Bread šŸ‹

My sweet mother in law passed away last fall, and I'm forever grateful for the recipes she shared with me. Not only does my husband love that I can make these dishes, but my entire family does too... We can wipe out a batch of lemon bread in less than 24 hours! Oops! šŸ˜‹


I am the first one to make a giant cake or fancy meal from scratch, but sometimes, the simpler the better. No one ever died from using a box cake mix as an ingredient, just ask Sandra Lee!


Give this simple "bread" a shot and let me know what you think! You can make two normal sized loaves, or split them as you see fit. Grammie used to make 6-8 mini loaves in one batch, I like to do a regular loaf and two minis. Just fill your greased pans of choice half-full and they'll turn out perfectly! Mix all ingredients until mixture is smooth and creamy, about 4 min:

ā€¢ 1 lemon cake mix

ā€¢ 1 C boiling water

ā€¢ 4 eggs

ā€¢ 1 package instant lemon pudding

ā€¢ 1/2 C oil


Pour into 2 loaf pans, bake at 350Ā° 45 minutes.

*Adjust time based on sizes of loaves, minis take about 20-25 minutes!


While bread cools, prepare Icing:

ā€¢ I cup powdered sugar

ā€¢ 6 tsp lemon juice

ā€¢ 1 Tbs softened butter


Punch holes in cake, drizzle over.
